Zucchini Noodles with Garlic Shrimp

Ingredients
- 4 medium-sized zucchinis
- 400g of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1/2 teaspoon of red pepper flakes
- Salt and black pepper to taste
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of freshly squeezed lemon juice
- 2 tablespoons of fresh parsley, chopped
Instructions
- Spiralize the zucchinis to create noodles. Set aside.
- Heat up the olive oil in a large pan over medium heat. Add the minced garlic and red pepper flakes and sauté until fragrant.
- Add the shrimp to the pan and cook until they turn pink, this should take about 3-4 minutes.
- Season the shrimp with salt and black pepper to taste.
- Remove the cooked shrimp from the pan and set aside. Keep the garlic sauce in the pan.
- In the same pan with the garlic sauce, add the zucchini noodles. Cook for 2-3 minutes. They should be just cooked and still crunchy.
- Return the shrimp to the pan and mix well with the zucchini noodles.
- Sprinkle the dish with the grated Parmesan cheese, fresh parsley, and drizzle with freshly squeezed lemon juice.
- Serve immediately and enjoy this healthy, flavorful meal!
