Zucchini Noodles with Garlic Shrimp

Ingredients

  • 4 medium-sized zucchinis
  • 400g of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1/2 teaspoon of red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup of grated Parmesan cheese
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 tablespoons of fresh parsley, chopped

Instructions

  1. Spiralize the zucchinis to create noodles. Set aside.
  2. Heat up the olive oil in a large pan over medium heat. Add the minced garlic and red pepper flakes and sauté until fragrant.
  3. Add the shrimp to the pan and cook until they turn pink, this should take about 3-4 minutes.
  4. Season the shrimp with salt and black pepper to taste.
  5. Remove the cooked shrimp from the pan and set aside. Keep the garlic sauce in the pan.
  6. In the same pan with the garlic sauce, add the zucchini noodles. Cook for 2-3 minutes. They should be just cooked and still crunchy.
  7. Return the shrimp to the pan and mix well with the zucchini noodles.
  8. Sprinkle the dish with the grated Parmesan cheese, fresh parsley, and drizzle with freshly squeezed lemon juice.
  9. Serve immediately and enjoy this healthy, flavorful meal!
