Ingredients

  • 2 fillets of wild salmon (approximately 6 oz each)
  • 3 tablespoons of ghee, divided
  • 1 lemon, grated for zest and juiced
  • 2 tablespoons of fresh dill, finely chopped
  • Salt and pepper to taste
  • Lemon slices and additional dill for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Place the salmon fillets skin down on the prepared baking dish. Season with salt and pepper.
  3. In a small saucepan, heat two tablespoons of ghee over medium heat until melted.
  4. Stir in the lemon zest, lemon juice, and chopped dill. Continue heating the mixture on low heat for another 2-3 minutes. This is your Lemon-Dill Ghee.
  5. Evenly spoon your Lemon-Dill Ghee over the salmon fillets, ensuring the fish is well coated.
  6. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked to your desired level of doneness.
  7. While the salmon is baking, melt the remaining ghee and set aside.
  8. Once baked, remove the salmon from the oven and drizzle with the melted ghee.
  9. Garnish your Wild Salmon with Lemon-Dill Ghee with slices of lemon and sprigs of dill. Serve hot, ideally with a side of roasted vegetables or a fresh salad.
  10. Remember, wild-caught salmon often has more flavor and texture than farmed salmon, enhancing this dish's overall taste profile. Enjoy the harmonious blend of flavors as you dig into this healthy, delicious meal.
