Spinach Stuffed Meatballs
These spinach stuffed meatballs introduce a healthy, vitamin-rich twist on a classic favourite. The tenderness of the juicy meatball pairs perfectly with the flavorful, slightly cheesy spinach filling, combining for a delectable treat. These are ideal for dinner parties, kids' lunches or even as a healthy alternative when the cravings hit!
Ingredients
- 500g of ground beef
- 200g of fresh spinach leaves
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 large egg
- 1/2 cup of breadcrumbs
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1 jar of marinara sauce (optional)
Instructions
- Preheat your oven to 200°C (400°F), and lightly oil a baking sheet.
- In a pan, sauté half the minced garlic in olive oil until golden, add the spinach leaves, stirring until they wilt.
- Remove from heat and mix in the grated Parmesan cheese. Set aside to cool.
- In a large bowl, combine the ground beef, remaining minced garlic, egg, breadcrumbs, salt, and pepper. Mix until the ingredients are well incorporated.
- Take approximately a tablespoon of the meat mixture and flatten it on your palm. Place a teaspoon of the cooled spinach filling in the center.
- Roll up the meat around the spinach, making sure it’s completely encased, then roll between your palms to form a round meatball. Repeat with the remaining meat and spinach mixture.
- Place the meatballs on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until browned and cooked through.
- Optional: Heat up the marinara sauce in a pan and let the cooked meatballs simmer in the sauce for 10 more minutes.
- Serve the spinach stuffed meatballs hot, paired with a side of pasta, rice, or enjoy them as they are!
