Spinach Stuffed Meatballs

These spinach stuffed meatballs introduce a healthy, vitamin-rich twist on a classic favourite. The tenderness of the juicy meatball pairs perfectly with the flavorful, slightly cheesy spinach filling, combining for a delectable treat. These are ideal for dinner parties, kids' lunches or even as a healthy alternative when the cravings hit!

Ingredients

  • 500g of ground beef
  • 200g of fresh spinach leaves
  • 1/2 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 large egg
  • 1/2 cup of breadcrumbs
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1 jar of marinara sauce (optional)

Instructions

  1. Preheat your oven to 200°C (400°F), and lightly oil a baking sheet.
  2. In a pan, sauté half the minced garlic in olive oil until golden, add the spinach leaves, stirring until they wilt.
  3. Remove from heat and mix in the grated Parmesan cheese. Set aside to cool.
  4. In a large bowl, combine the ground beef, remaining minced garlic, egg, breadcrumbs, salt, and pepper. Mix until the ingredients are well incorporated.
  5. Take approximately a tablespoon of the meat mixture and flatten it on your palm. Place a teaspoon of the cooled spinach filling in the center.
  6. Roll up the meat around the spinach, making sure it’s completely encased, then roll between your palms to form a round meatball. Repeat with the remaining meat and spinach mixture.
  7. Place the meatballs on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until browned and cooked through.
  8. Optional: Heat up the marinara sauce in a pan and let the cooked meatballs simmer in the sauce for 10 more minutes.
  9. Serve the spinach stuffed meatballs hot, paired with a side of pasta, rice, or enjoy them as they are!
