Spinach Mushroom Frittata

This Spinach and Mushroom Frittata is a delicious and low carb meal, perfect for breakfast or a casual dinner. It's packed with vegetables and protein, making it not only tasty, but also healthy.

Ingredients

  • 8 eggs
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1/2 cup of grated cheese (cheddar or parmesan)
  • 1 tablespoon of olive oil
  • 1/2 cup of milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the mushrooms and cook until they are soft and browned, about 5 minutes.
  3. Add the spinach to the skillet and cook until it is wilted, about 1-2 minutes.
  4. In a large bowl, whisk together the eggs, milk, and salt and pepper. Pour the egg mixture over the vegetables in the skillet and stir lightly to ensure the ingredients are evenly distributed.
  5. Sprinkle the cheese evenly over the top of the egg mixture. Cook for 1-2 minutes until the edges of the frittata start to set.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is firm in the middle and the cheese is golden brown.
