Spinach and Feta Stuffed Chicken
This scrumptious chicken dish blends the savory notes of chicken with the creamy, tangy flavor of feta cheese, coupled with the nutrient-rich goodness of spinach. It's a delightful dish for summer get-togethers or family meals, striking a perfect balance between hearty and healthy.
Ingredients
- 4 skinless, boneless chicken breasts
- 1 cup of feta cheese, crumbled
- 2 cups of fresh spinach, chopped
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- Salt and black pepper to taste
- Zest and juice of one lemon
- 1/2 teaspoon of dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant, normally 1-2 minutes.
- Add the spinach to the pan and cook until wilted, about 3-4 minutes. Once cooked, remove from heat and stir in the crumbled feta cheese.
- While the spinach is cooling, create a pocket in each chicken breast by cutting into the side, making sure not to cut all the way through.
- Stuff each chicken breast with the spinach and feta mixture, then secure it with toothpicks.
- Season the outside of the chicken breasts with the lemon zest, salt, pepper, and oregano.
- Place the stuffed chicken breasts in a lightly greased baking dish and drizzle with the lemon juice.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the middle.
- Let the chicken rest for a couple of minutes before serving to allow the juices to redistribute. Remember to remove the toothpicks before eating. Enjoy!
