Spaghetti Aglio e Olio

This quintessential Italian pasta dish is simplicity at its best. With a harmonious blend of garlic and olive oil, Spaghetti Aglio e Olio is the embodiment of minimalist cooking that delivers maximum flavor.

Ingredients

  • 200g of spaghetti
  • 4 cloves of garlic, thinly sliced
  • 1/2 teaspoon of red pepper flakes
  • 1/2 cup of extra virgin olive oil
  • Salt to taste
  • A handful of fresh parsley, finely chopped
  • 1/2 cup of grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to boil. Cook spaghetti according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes.
  3. Sauté until garlic is lightly golden (be careful not to burn it), about 2-3 minutes.
  4. Reserve 1 cup of pasta cooking water, then drain the pasta.
  5. Add the pasta to the skillet with garlic and oil. Toss well to coat.
  6. Add a splash of reserved pasta water if needed to create a light sauce.
  7. Stir in chopped parsley and season with salt to taste.
  8. Serve hot, topped with grated Parmesan cheese if desired.
