Spaghetti Aglio e Olio
This quintessential Italian pasta dish is simplicity at its best. With a harmonious blend of garlic and olive oil, Spaghetti Aglio e Olio is the embodiment of minimalist cooking that delivers maximum flavor.
Ingredients
- 200g of spaghetti
- 4 cloves of garlic, thinly sliced
- 1/2 teaspoon of red pepper flakes
- 1/2 cup of extra virgin olive oil
- Salt to taste
- A handful of fresh parsley, finely chopped
- 1/2 cup of grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to boil. Cook spaghetti according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes.
- Sauté until garlic is lightly golden (be careful not to burn it), about 2-3 minutes.
- Reserve 1 cup of pasta cooking water, then drain the pasta.
- Add the pasta to the skillet with garlic and oil. Toss well to coat.
- Add a splash of reserved pasta water if needed to create a light sauce.
- Stir in chopped parsley and season with salt to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
