Lush Chicken Avocado Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 2 large ripe avocados
- 4 cups of mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro (optional)
- 1/2 cup of your favorite vinaigrette dressing
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a pan over medium heat. Once the oil is hot, add the chicken breasts and cook for around 6-7 minutes on each side until they turn golden brown and are thoroughly cooked. Remove the chicken from the pan and let it rest.
- While the chicken rests, start preparing the salad base. In a large bowl, combine the mixed salad greens, cherry tomatoes, red onion, and chopped cilantro (if using).
- Chop the avocados into small chunks and add them to the salad.
- Once the chicken has sufficiently rested, cut it into thin slices, and add it to your salad.
- Pour your favorite vinaigrette over the salad and gently toss everything together taking care not to mash the avocados.
