Lush Chicken Avocado Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 large ripe avocados
  • 4 cups of mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped cilantro (optional)
  • 1/2 cup of your favorite vinaigrette dressing
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a pan over medium heat. Once the oil is hot, add the chicken breasts and cook for around 6-7 minutes on each side until they turn golden brown and are thoroughly cooked. Remove the chicken from the pan and let it rest.
  3. While the chicken rests, start preparing the salad base. In a large bowl, combine the mixed salad greens, cherry tomatoes, red onion, and chopped cilantro (if using).
  4. Chop the avocados into small chunks and add them to the salad.
  5. Once the chicken has sufficiently rested, cut it into thin slices, and add it to your salad.
  6. Pour your favorite vinaigrette over the salad and gently toss everything together taking care not to mash the avocados.
