Ingredients
- 500g of ground turkey
- 1 cup of shredded Mozzarella cheese
- 1/2 cup of almond flour
- 1 large egg
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and black pepper to taste
- 2 tablespoons of olive oil
- 2 cups of marinara sauce (sugar-free for full keto)
Instructions
- In a large bowl, combine the ground turkey, 1/2 cup of the mozzarella cheese, almond flour, egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well.
- Shape the mixture into golf-sized meatballs, about 1 1/2 inches in diameter. This should yield about 12-15 meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches, taking care not to overcrowd the pan, and cook until all sides are browned (about 12 minutes total).
- Meanwhile, heat the marinara sauce in a separate saucepan over medium heat.
- Once browned, transfer the meatballs to the saucepan with marinara sauce, cover, and let simmer for about 10 minutes to let the flavors meld together.
- Sprinkle the other 1/2 cup of mozzarella cheese over the top of the meatballs and cover the pan again until the cheese has melted.
- Remove from heat and let the meatballs cool slightly before serving. Enjoy them on their own or over zucchini noodles for a complete low-carb meal.
