Ingredients

  • 500g of ground turkey
  • 1 cup of shredded Mozzarella cheese
  • 1/2 cup of almond flour
  • 1 large egg
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and black pepper to taste
  • 2 tablespoons of olive oil
  • 2 cups of marinara sauce (sugar-free for full keto)

Instructions

  1. In a large bowl, combine the ground turkey, 1/2 cup of the mozzarella cheese, almond flour, egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well.
  2. Shape the mixture into golf-sized meatballs, about 1 1/2 inches in diameter. This should yield about 12-15 meatballs.
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches, taking care not to overcrowd the pan, and cook until all sides are browned (about 12 minutes total).
  4. Meanwhile, heat the marinara sauce in a separate saucepan over medium heat.
  5. Once browned, transfer the meatballs to the saucepan with marinara sauce, cover, and let simmer for about 10 minutes to let the flavors meld together.
  6. Sprinkle the other 1/2 cup of mozzarella cheese over the top of the meatballs and cover the pan again until the cheese has melted.
  7. Remove from heat and let the meatballs cool slightly before serving. Enjoy them on their own or over zucchini noodles for a complete low-carb meal.
