Kale Avocado Salad

Ingredients
- 3 cups of kale, destemmed and torn into bite-sized pieces
- 1 large, ripe avocado, diced
- 1/2 red onion, thinly sliced
- 1 cup of cherry tomatoes, halved
- 1/4 cup of crumbled feta cheese
- 1 tablespoon of lemon juice
- 2 tablespoons of extra-virgin olive oil
- Salt and black pepper to taste
Instructions
- In a large salad bowl, place the torn kale.
- Drizzle with the olive oil and massage the kale gently with your hands until the kale becomes soft and the bitterness is reduced, about 2-3 minutes.
- Add the diced avocado, sliced red onion, halved cherry tomatoes, and crumbled feta cheese to the bowl.
- Drizzle over the lemon juice, and season with salt and pepper to taste.
- Toss the salad until all ingredients are combined and evenly coated in the lemon juice and olive oil.
