Kale Avocado Salad

This vibrant, nutrient-rich salad is a powerhouse of flavors. The combination of fresh kale, creamy avocado, and tangy lemon creates a refreshing yet satisfying dish that's not only healthy but also delicious. It's perfect for a light lunch or as a side dish with your main meal.

Ingredients

  • 3 cups of kale, destemmed and torn into bite-sized pieces
  • 1 large, ripe avocado, diced
  • 1/2 red onion, thinly sliced
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of crumbled feta cheese
  • 1 tablespoon of lemon juice
  • 2 tablespoons of extra-virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. In a large salad bowl, place the torn kale.
  2. Drizzle with the olive oil and massage the kale gently with your hands until the kale becomes soft and the bitterness is reduced, about 2-3 minutes.
  3. Add the diced avocado, sliced red onion, halved cherry tomatoes, and crumbled feta cheese to the bowl.
  4. Drizzle over the lemon juice, and season with salt and pepper to taste.
  5. Toss the salad until all ingredients are combined and evenly coated in the lemon juice and olive oil.
  6. Serve immediately, or chill in the fridge before serving for a cooler salad.
  7. **Note:** For added protein, consider adding some grilled chicken or roasted chickpeas to the salad.
