Ingredients

  • 6 flaxseed wraps
  • 1 cup of black beans, cooked
  • 1 cup of corn kernels
  • 1 large avocado, diced
  • 1 medium-sized onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of lettuce, shredded
  • 1/2 cup of grated cheddar cheese
  • 1 tablespoon of extra-virgin olive oil
  • A pinch of salt
  • A pinch of black pepper
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  2. Add the minced garlic, stirring it in with the onions until it's fragrant – it usually takes about 1 minute.
  3. Stir in the black beans and corn, then season the mixture with salt and pepper to taste.
  4. Cook the bean and corn mix for about 5 more minutes, making sure everything is heated through.
  5. To assemble the tacos, place a flaxseed wrap on a clean flat surface. In the center, add a generous spoonful of the bean and corn mixture.
  6. On top of the bean mixture, add some diced avocado, halved cherry tomatoes, and shredded lettuce.
  7. Sprinkle some grated cheddar cheese over the assembled ingredients, then squeeze a little fresh lime juice on top.
  8. Fold the flaxseed wrap from the bottom up and over the filling, then tuck in the sides.
  9. Repeat the assembly with the remaining wraps and ingredients.
  10. Serve the tacos immediately while they're still fresh and crisp, garnishing with fresh cilantro if desired.
