Hearty Flaxseed Wrap Tacos
These flaxseed wrap tacos are the perfect solution for a quick and healthful meal. With a nutty-tasting wrap chock-full of healthy omega-3 fats and a refreshing veggie filling, this recipe is both wholesome and lip-smackingly delicious.
Ingredients
- 6 flaxseed wraps
- 1 cup of black beans, cooked
- 1 cup of corn kernels
- 1 large avocado, diced
- 1 medium-sized onion, chopped
- 2 cloves of garlic, minced
- 1 cup of cherry tomatoes, halved
- 1 cup of lettuce, shredded
- 1/2 cup of grated cheddar cheese
- 1 tablespoon of extra-virgin olive oil
- A pinch of salt
- A pinch of black pepper
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the minced garlic, stirring it in with the onions until it's fragrant – it usually takes about 1 minute.
- Stir in the black beans and corn, then season the mixture with salt and pepper to taste.
- Cook the bean and corn mix for about 5 more minutes, making sure everything is heated through.
- To assemble the tacos, place a flaxseed wrap on a clean flat surface. In the center, add a generous spoonful of the bean and corn mixture.
- On top of the bean mixture, add some diced avocado, halved cherry tomatoes, and shredded lettuce.
- Sprinkle some grated cheddar cheese over the assembled ingredients, then squeeze a little fresh lime juice on top.
- Fold the flaxseed wrap from the bottom up and over the filling, then tuck in the sides.
- Repeat the assembly with the remaining wraps and ingredients.
- Serve the tacos immediately while they're still fresh and crisp, garnishing with fresh cilantro if desired.
