Healthy Chicken & Veggie Stir-Fry
This healthy, flavorful dish is loaded with tender chicken, fresh vegetables, and a savory stir-fry sauce. It’s not only nutritious but also easy to cook, making it a perfect weeknight meal. An excellent choice for fitness enthusiasts or anyone looking for a light yet filling meal.
Ingredients
- 500g of boneless, skinless chicken breast, cut into thin strips
- 1 large carrot, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 broccoli head, cut into florets
- 1 cup of snow peas
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and black pepper to taste
- 4 tablespoons of soy sauce
- 1 tablespoon of cornstarch
- 1 teaspoon of honey
- 2 teaspoons of sesame seeds (optional)
Instructions
- In a large wok or frying pan, heat 1 tablespoon of olive oil over medium heat. Add the chicken strips, season with salt and pepper, and sauté until golden brown and cooked through, about 6-8 minutes. Remove from the pan and set it aside.
- In the same pan, add another tablespoon of olive oil, then add the garlic, cooking until fragrant for about 1 minute.
- Add the broccoli, bell peppers, and carrot to the pan, stir-frying for around 5 minutes, or until they are just soft. Add the snow peas and cook for a further 2 minutes.
- While vegetables are being cooked, in a separate bowl, whisk together soy sauce, cornstarch, and honey until well combined to make the stir-fry sauce.
- Return the cooked chicken to the pan with the vegetables. Pour the stir-fry sauce over the chicken and vegetables, tossing to coat well. Cook for another 2-3 minutes, or until the sauce has thickened slightly.
- Sprinkle the stir-fry with sesame seeds before serving if desired.
