- 2 tablespoons of olive oil
- Juice of one lemon
- Salt and black pepper to taste
- 1/2 teaspoon of red pepper flakes (optional)
- Fresh parsley, chopped, for serving
- Grated Parmesan cheese, for serving
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes on each side, or until they're pink and cooked through. Remove the shrimp from the skillet and set them aside.
- In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for a minute until the garlic is fragrant.
- Add the spiralized zucchini to the skillet and cook for about 2-3 minutes, just until the zoodles are tender. Be careful not to overcook them to prevent them from becoming soggy.
- Return the cooked shrimp to the skillet and squeeze the lemon juice over the mixture. Toss everything together until the zoodles and shrimp are coated in the garlic and lemon flavors.
- Taste the dish and adjust the seasoning if needed.
- Serve the Garlic Shrimp Zoodles hot, garnished with fresh parsley and a sprinkle of grated Parmesan cheese.
