Cucumber and Smoked Salmon Roll Ups
This refreshing, bite-sized snack is perfect for a healthy mid-day treat or as an appetizer at parties. The cool crunch of cucumber pairs deliciously with the savory smoked salmon, and it's all pulled together with a tangy cream cheese filling. Plus, it's incredibly easy to prepare!
Ingredients
- 2 long English cucumbers, peeled into thin strips
- 200g of smoked salmon, sliced
- 1 cup of cream cheese, softened
- 2 tablespoons of fresh dill, finely chopped
- 1 teaspoon of lemon zest
- Salt and black pepper to taste
Instructions
- With a vegetable peeler, peel the cucumber lengthwise into thin strips. Lay strips out flat on a clean surface.
- In a bowl, combine the cream cheese, dill, and lemon zest until well mixed. Season with salt and pepper to taste.
- Spread a thin layer of cream cheese mixture onto each cucumber strip.
- Place a slice of smoked salmon on top of the cream cheese layer on each cucumber strip.
- Starting from one end, carefully roll the cucumber and salmon up into a tight spiral. Repeat with remaining strips.
- Chill the roll-ups in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
- Serve as a refreshing appetizer or a healthy snack, and enjoy the delightful combination of textures and flavors.
