Avocado Stuffed Chicken
A tantalizing mix of velvety avocado and tender chicken makes this dish a hearty, healthy choice for both lunch and dinner. It’s a fresh spin on comfort food, with the creamy avocado providing a delicious surprise inside succulent baked chicken breasts.
Ingredients
- 4 chicken breasts
- 2 ripe avocados, halved and pitted
- 1 cup of mozzarella cheese, shredded
- 1/2 cup of cherry tomatoes, halved
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C). Grease a baking sheet or dish with olive oil and set aside.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally through the thickest part, being careful not to cut all the way through.
- In a bowl, scoop out the avocado and mash it gently, then mix in cherry tomatoes and shredded mozzarella.
- Stuff each chicken breast pocket with the avocado mixture. Sprinkle garlic and onion powder on the chicken, then season with salt and pepper as desired.
- Place the stuffed chicken breasts on prepared baking sheet or dish. Bake in the preheated oven for about 20 to 25 minutes, or until chicken is cooked through and no longer pink inside.
- Garnish with fresh basil right before serving. Pair this dish with a fresh, crunchy salad or some steamed vegetables and enjoy!
